Taco Soup

Dear Neighbor,

This cozy, comfort food recipe is #1 on our wintertime Meal Planner. If you can prepared taco meat, every ingredient can pulled from your pantry!  Use organic ingredients when you can find them especially the taco seasoning because those that aren’t organic are full of MSG and other chemicals we don’t want to make friends with. I hope you enjoy as much as we do!

 

 

Taco Soup

2 lb. ground beef

1 46 oz. can tomato juice

1 onion

1 pkg or 1/4 c. Frontier organic taco seasoning or to taste

1 can kernel corn

1 can black olives

2 cans black or kidney beans

1 can diced tomatoes

dash of dried cilantro

salt to taste

Brown ground beef. Chop onions, slice olives. Drain corn and beans. Pour tomato juice in crock pot. Add tomatoes with juice. Add all other ingredients and simmer on low all day. Serve topped with cheddar cheese and sour cream. Great with corn chips or corn bread muffins.
