I had a hankering for guacamole and no avocado. My tenacious mind dug deep and remembered hearing long ago about guac made with peas. Back then I poo pooed it. Why mess with perfection, right? However, a homesteader must make due with what is on hand and most of us can’t grow avocados, anyway. (darn!) So I thought I would give the pea version a try. It tastes great and easily available because you use frozen peas. Don’t use canned peas. They are too mushy for this recipe. When I mentioned this on Facebook, one of the neighbors asked for the recipe so here it is. Simple to make and bottom line, use your original favorite guac recipe and replace peas for avocados. One plus to using peas is, unlike avocados, peas don’t turn brown and this is a great dish to make the day before. It will remain bright green and will actually taste better when the flavors have time to chill and blend.
Pea Guacamole
2 cups thawed frozen peas, blended until fairly smooth
one small purple onion chopped finely
1 small tomato chopped finely or half a can of drained, chopped canned tomatoes
1 small jalapeno or a few canned slices chopped
2 T. lime juice
1 T. cilantro
salt and pepper to taste
Mix all ingredients to the blended peas. Salt and pepper well. Peas need a good amount of salt. If you have super sweet peas, add more lime juice.
